Ingredients
- 150 g Chicken breast
- 150 g Cooked brown rice
- 0.5 medium Bell pepper (any color)
- 0.25 small Red onion
- 75 g Broccoli florets
- 5 ml Olive oil
- 15 ml Lemon juice
- 0.5 tsp Garlic powder
- 0.25 tsp Paprika
- 0.25 tsp Salt
- 0.125 tsp Black pepper
- 1 tbsp Fresh parsley (optional)
Instructions
- Pat chicken breast dry and season with salt, pepper, garlic powder, and paprika.
- Preheat a grill or grill pan to medium-high heat. Lightly oil.
- Grill chicken for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice.
- While chicken cooks, chop bell pepper, red onion, and broccoli into bite-sized pieces.
- In a medium bowl, toss the chopped vegetables with olive oil, a pinch of salt, and pepper.
- You can either grill the vegetables alongside the chicken for 5-7 minutes, stirring occasionally, or steam/microwave them until tender-crisp.
- In a bowl, combine the cooked brown rice, sliced grilled chicken, and cooked vegetables.
- Drizzle with fresh lemon juice and garnish with fresh parsley if desired. Serve immediately.
